We had a big challenge with this bathroom layout.  Having two tiny sinks with a drop-in tub in between them was a total waste of space.  We had to do a complete layout change.  We closed off the door to the toilet and moved the door to the other side of the wall to provide more space.   Allowing us the room for a proper double sink with the off-center vanity.
